I recently visited the Mark Restaurant in the Shilo Inn Beaverton in Portland. I enjoyed a wonderful pan-seared wild salmon over cashew jasmine rice, coconut nosh and strawberry watercress salad. This dish paired wonderfully with a pinot noir with strong strawberry notes. I would love to have the recipe for the dish, especially for the coconut nosh. Thank you.

Broccoli-cheese soup

Prep time: 10 minutes Cook time: 25 minutes Serves 6

Nancy Huish of Sacramento enjoyed the broccoli-cheese soup that used to be served at TGI Friday's in the 1980s. She's been unable to find a soup that comes close.

J. Patrick Kelly of Sacramento shares this recipe, which sounds like a match.

INGREDIENTS

4 cups chicken broth

1 cup water

1 cup half-and-half

5 slices Kraft cheddar cheese

1/2 cup flour

1/2 teaspoon dried onion flakes

1/4 teaspoon ground black pepper

4 cups bite-sized broccoli florets

1/2 cup shredded cheddar cheese, garnish

2 teaspoons minced fresh parsley, garnish

INSTRUCTIONS

Combine broth, water, half-and-half, cheese slices, flour, onion and pepper in a large saucepan. Whisk to combine and break up any lumps of flour. Turn heat to medium-high and bring soup to a boil, then reduce heat to low.

Add broccoli to soup and simmer for 15 to 20 minutes, or until broccoli is tender but not soft. Ladle soup into individual bowls and garnish with shredded cheese and parsley.
