Chop talk with Meding & Son Seafood Chef Brooks Mears

Brooks Mears went to college to study radiology, but become more involved in the diagnosis of its shortcomings kitchen that the review of radiographs. He changed the culinary arts and was whipping all Hungarian food specialties from seafood. The young leader spoke to us about working Meding & Son Seafood, and how a school friend inspired him to use everything down to the last crumb in his closet.

Q. Why and when did you start cooking? A I was running a video store and went out of business, so I started working here as a dishwasher. It was nine years ago.Then they were short a cook, and I somehow got put into it. At the time I went to school for radiology and wanted out of there. So I finally finished culinary school Deltech, Terry Campus. I went to cooking school while working here, and since then I became more serious about cooking. At first I was just fry the guy, then I was in the Middle man who speeds all the food, and then I ran to blow. It happened almost two years after my arrival here.

Q What are some of the most popular items on the menu Meding? A It's like if you let the food speak for you.When it is frozen, you really need better season, better prepared, and there is little margin for error. If you do not right, people will notice. Have you ever watched "Hell's Kitchen?" The first thing he chooses is whether it's frozen.

Q Do you watch a lot of cooking shows? I do not much veal, pork, sushi night at my house sometimes. Basically, I keep the protein the same, just change what I do with it. I grill, stuff it, make different sauces.I did everything from sauces with Guinness to crust with crumbs left in the bag of Cheez-It. I have a pork chop crusted like that. A lot of stuff I do, I do not think it will work at first, but when it does I think, "Cool, I'll have to write that one down.
